Flourless Almond and Coconut Cake

Making a Flourless Almond and Coconut Cake is really simple and requires a few easily available ingredients. This dessert is naturally gluten-free and ideal for those who follow a diet without refined flours.


Ingredients

  • 200g almond flour
  • 100g grated coconut
  • 4 large eggs
  • 150g of brown sugar
  • 1 teaspoon vanilla extract
  • Organic lemon zest (grated)
  • 1 teaspoon gluten-free baking powder

Instructions

  • Preheat the oven to 180°C and line a cake tin with baking paper.
  • In a large bowl, beat the eggs and sugar until frothy.
  • Add the almond flour, grated coconut and mix gently.
  • Combine vanilla extract and lemon zest for a fresh, citrusy flavor.
  • Add the baking powder and continue mixing until the mixture is smooth.
  • Pour the batter into the pan and bake for 30-40 minutes. Check the doneness by inserting a toothpick into the center of the cake: if it comes out clean, the flourless cake is ready.

Notes

Once baked, let the cake cool completely before serving. This almond and coconut cake lends itself well to being decorated with powdered sugar or coconut flakes.
