Ingredients:
Minted meat
Eggs
Breadcrumbs
Garlic
Salt
Pepper
Cheese
Extra virgin olive oil
Celery
Carrots
Onion
Peas
Stock cube
Water
Fresh parsley
Method:
Prepare the meatballs: mix the minced meat with the eggs, breadcrumbs, minced garlic, salt, pepper and cheese. Shape into meatballs and set aside.
Sauté: in a large pot, sauté the celery, carrots and onion in extra virgin olive oil.
Add the peas: add the peas, cover with hot water and add a stock cube.
Cook the meatballs: when the water boils, dip the meatballs into the pot.
Cooking: cook over low heat with a lid for about 25 minutes.
Serving: add some chopped fresh parsley and plate the stewed meatballs with carrots and peas.
