Neapolitan Struffoli

Ingredients

  • 300g of flour
  • 3 eggs
  • 50g butter
  • 1 tablespoon sugar
  • Grated zest of 1 orange
  • Honey (as much as needed)
  • Colored sprinkles for decoration

Instructions

  1. Preparation of the dough:
    • Place the flour in a fountain shape on a pastry board.
    • In the center, add the eggs, softened butter, sugar and grated orange zest.
    • Mix the ingredients until you obtain a smooth, homogeneous mixture.
  2. Formation of the balls:
    • Divide the dough into small pieces and shape into thin loaves.
    • Cut the loaves into pieces of about 1 cm and shape each into a ball.
  3. Frying:
    • Heat plenty of oil in a deep pan.
    • Fry the balls a few at a time, making sure they are evenly golden.
    • Drain them on absorbent paper to remove excess oil.
  4. Honey glaze:
    • In a large saucepan, heat the honey until it becomes runny.
    • Add the fried struffoli and mix gently to completely coat them in honey.
  5. Decoration:
    • Arrange the struffoli on a serving dish, giving them the desired shape (traditionally a donut or pyramid).
    • Decorate with colored sprinkles and, if you like, candied fruit.
