Ingredients
- 300g of high quality dark chocolate
- 150g butter
- 100g sugar
- 4 fresh eggs
- 30g of bitter cocoa
- 200 ml of cream
Instructions
- Preparation of ingredients : Melt the dark chocolate in a bain-marie together with the butter until you obtain a smooth and homogeneous mixture. Let it cool slightly.
- Beat the eggs : In a separate bowl, beat the eggs and sugar until light and fluffy. Slowly add the melted chocolate , stirring gently with a spatula.
- Add the dry ingredients : Sift the cocoa and add it to the mixture along with a pinch of salt. This step is crucial to avoid lumps.
- Baking : Pour the mixture into a greased and floured pan, and bake in a preheated oven at 160°C for about 30-35 minutes. The cake should remain moist in the center.
Finally, once cooled, you can decorate your truffle cake with a dusting of bitter cocoa or with chocolate chips.
