Ingredients
- 500 g of fresh prawns , cleaned and shelled
- 200 ml coconut milk
- 2 cloves of garlic , finely chopped
- 1 tbsp curry powder
- 1 medium onion, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chili pepper (optional) for a touch of spiciness
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until golden brown.
- Add the fresh shrimp and cook for 2-3 minutes, until they start to turn pink. Avoid overcooking them.
- Add the curry powder and mix well to flavor the shrimp. Then add the coconut milk and mix again.
- Bring the sauce to a boil, reduce the heat and simmer for another 5 minutes, until the sauce thickens. Season with salt and pepper.
