Shrimp Curry with Garlic and Coconut Milk

Curry Shrimp with Garlic and Coconut Milk is a creamy and aromatic dish, perfect for a quick and tasty dinner. The sauce, based on coconut milk and curry, delicately envelops the shrimp, creating a mix of exotic and balanced flavors. Ideal to accompany with basmati rice.


Ingredients

  • 500 g of fresh prawns , cleaned and shelled
  • 200 ml coconut milk
  • 2 cloves of garlic , finely chopped
  • 1 tbsp curry powder
  • 1 medium onion, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chili pepper (optional) for a touch of spiciness

Instructions

  • In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, sautéing until golden brown.
  • Add the fresh shrimp and cook for 2-3 minutes, until they start to turn pink. Avoid overcooking them.
  • Add the curry powder and mix well to flavor the shrimp. Then add the coconut milk and mix again.
  • Bring the sauce to a boil, reduce the heat and simmer for another 5 minutes, until the sauce thickens. Season with salt and pepper.
