Wash the cherry tomatoes thoroughly and cut them in half.
Rinse the capers under running water to remove excess salt.
Finely chop the garlic clove .
Marinating the Salmon:
In a bowl, mix the lemon juice , 2 tablespoons of extra virgin olive oil , the minced garlic , the oregano , salt and pepper .
Submerge the salmon fillets in the marinade, making sure they are well covered. Cover the bowl and let marinate in the refrigerator for at least 30 minutes.
Assembly:
Preheat the oven to 200°C.
Place the marinated salmon fillets on a baking tray lined with baking paper.
Evenly distribute the cherry tomatoes , black olives and capers over and around the fillets.
Drizzle everything with the remaining tablespoon of extra virgin olive oil .
Cooking:
Place the pan in the oven and cook for about 20 minutes, or until the salmon is cooked through but still juicy inside.
For a light browning, you can use the grill function in the last 2-3 minutes of cooking.
Service:
Once ready, take the Mediterranean salmon fillets out of the oven and serve them hot, garnished with a drizzle of raw extra virgin olive oil and a sprinkling of fresh oregano .
Notes
To further enhance the flavors, you can add fresh herbs such as thyme or basil to the cherry tomato and olive mix .
If you prefer a spicy note, add some chopped chili peppers to the marinade.
Accompany the dish with a side of grilled vegetables or a mixed salad for a complete and balanced meal.
