No-Bake Coconut Cream Balls

Ingredients

  • 250g grated coconut 
  • 240g sweetened condensed milk 
  • 1/2 teaspoon vanilla extract 
  • 125g icing sugar 
  • 80g chopped walnuts ( optional)
  • 225g white or dark chocolate ( to be melted)

Instructions

  • Mix the dry ingredients:
    • In a large bowl, combine the grated coconut , powdered sugar , and chopped walnuts (if using). Mix well to evenly distribute the ingredients.
  • Add the wet ingredients:
    • Pour the sweetened condensed milk and vanilla extract into the dry ingredients mixture. Mix until the dough is smooth and slightly sticky.
  • Form the balls:
    • With slightly damp hands, scoop out small amounts of dough and form walnut-sized balls. Place on a baking tray lined with parchment paper.
  • Cool the balls:
    • Place the tray in the refrigerator for at least 30 minutes, allowing the balls to solidify and facilitate subsequent covering with chocolate.
  • Melt the chocolate:

  • Cover the balls:
    • Using a fork or toothpick, dip each ball into the melted chocolate, making sure they are completely covered. Shake off any excess chocolate and place the balls back on the lined tray.
  • Leave to solidify:
    • Once covered, let the balls cool at room temperature or in the refrigerator until the chocolate has completely solidified.
