Apple Pie with Cream

Ingredients

For the cake:

  • apples (preferably Golden or Granny Smith, peeled and sliced)
  • eggs 
  • 150 g of granulated sugar 
  • 100 g of melted butter 
  • 200 g of 00 flour 
  • 1 sachet of baking powder 
  • 1 teaspoon vanilla extract 

For the cream:

  • egg yolk 
  • 270 ml whole milk 
  • 30 g of 00 flour 
  • 25 g of sugar 
  • 1 teaspoon vanilla extract 

Instructions

  • Preparation of the cream:
    • In a bowl, beat the egg yolk with the sugar until pale.
    • Add the sifted 00 flour and mix well to avoid lumps.
    • In a saucepan, heat the whole milk with the vanilla extract until almost boiling.
    • Slowly pour the hot milk into the egg mixture, stirring constantly.
    • Return everything to the saucepan and cook over low heat, stirring, until the cream thickens.
    • Cover with cling film and leave to cool.
  • Cake preparation:
    • Preheat the oven to 180°C.
    • In a large bowl, beat the eggs with the granulated sugar until frothy.
    • Add the melted butter and vanilla extract , mixing gently.
    • Sift the 00 flour with the baking powder and add them to the mixture, mixing until you obtain a smooth dough.
    • Add the sliced ​​apples and mix gently to distribute them evenly.
  • Assembly:
    • Pour half of the mixture into a greased and floured cake pan.
    • Spread the cooled cream evenly over the dough.
    • Cover with the remaining dough, leveling the surface.
  • Cooking:
    • Bake for about 40-45 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
    • Let cool before serving.
