Ingredients
For the cake:
- 4 apples (preferably Golden or Granny Smith, peeled and sliced)
- 3 eggs
- 150 g of granulated sugar
- 100 g of melted butter
- 200 g of 00 flour
- 1 sachet of baking powder
- 1 teaspoon vanilla extract
For the cream:
- 1 egg yolk
- 270 ml whole milk
- 30 g of 00 flour
- 25 g of sugar
- 1 teaspoon vanilla extract
Instructions
- Preparation of the cream:
- In a bowl, beat the egg yolk with the sugar until pale.
- Add the sifted 00 flour and mix well to avoid lumps.
- In a saucepan, heat the whole milk with the vanilla extract until almost boiling.
- Slowly pour the hot milk into the egg mixture, stirring constantly.
- Return everything to the saucepan and cook over low heat, stirring, until the cream thickens.
- Cover with cling film and leave to cool.
- Cake preparation:
- Preheat the oven to 180°C.
- In a large bowl, beat the eggs with the granulated sugar until frothy.
- Add the melted butter and vanilla extract , mixing gently.
- Sift the 00 flour with the baking powder and add them to the mixture, mixing until you obtain a smooth dough.
- Add the sliced apples and mix gently to distribute them evenly.
- Assembly:
- Pour half of the mixture into a greased and floured cake pan.
- Spread the cooled cream evenly over the dough.
- Cover with the remaining dough, leveling the surface.
- Cooking:
- Bake for about 40-45 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.
- Let cool before serving.
