To create an authentic Torta Barozzi , it is essential to use quality ingredients, which give life to the rich and unique flavor of this cake. The main ingredients include:


Ingredients

  • 250 g dark chocolate
  • 150 g of granulated sugar
  • 100 g almonds , toasted and finely ground for a more intense flavour
  • 80 g of butter
  • 4 eggs , separating yolks and whites for a fluffier consistency
  • 1 cup of coffee , to enrich the aroma
  • 1 small glass of rum , added to balance the taste
  • A pinch of salt

Instructions

  • Preheat the oven to 180°C and prepare a pan lined with baking paper.
  • Melt the dark chocolate in a bain-marie, adding the butter until it melts evenly.
  • Toast the almonds , grinding them until you get a fine powder. This step is essential for the authentic flavor of the Barozzi cake.
  • In a large bowl, beat the egg yolks with the sugar until light and fluffy. Add the melted chocolate, coffee and rum, mixing well.
  • Add the chopped almonds and a pinch of salt.
  • Beat the egg whites until stiff and gently fold them into the mixture.
