Greek Yogurt Cookies

Ingredients

  • 150 g of 0% Greek yogurt
  • 110 g flour (mix of oats, wholemeal and buckwheat)
  • 1 teaspoon honey
  • 1 square of 88% dark chocolate (or more, if you prefer)
  • 1 teaspoon baking powder
  • A pinch of salt (optional)

Instructions

  • Preparation of the dough:
    • In a large bowl, mix the flours with the yeast and a pinch of salt.
    • Separately, combine the Greek yogurt and honey, mixing until you obtain a smooth cream.
    • Pour the yogurt cream into the bowl with the flours and mix everything together until you get a smooth dough.
  • Adding Chocolate:
    • Break the 88% dark chocolate square into small pieces.
    • Gently fold the chocolate pieces into the mixture, distributing them evenly.
  • Shaping the cookies:
    • Preheat the oven to 180°C.
    • Line a baking sheet with parchment paper.
    • Using a spoon, take portions of dough and shape them into balls.
    • Arrange the balls on the baking tray, pressing them down slightly to give them the shape of a biscuit.
  • Cooking:
    • Bake the cookies for about 12-15 minutes, or until golden.
    • Once cooked, let them cool on a rack.
