Soaking Biscuits

Ingredients

  • 2 whole eggs 
  • 150 g of sugar 
  • Grated zest of 1 lemon 
  • 40 ml sunflower seed oil 
  • 60 ml of milk at room temperature 
  • 9 g of baking ammonia 
  • 500 g of 00 flour 
  • Granulated sugar for rolling the biscuits 

Instructions

  • Preparation of the dough:
    • In a large bowl, beat the eggs and sugar until light and fluffy.
    • Add the grated lemon peel to flavor the dough.
    • Pour the sunflower seed oil and the milk at room temperature, mixing well to combine the ingredients.
  • Incorporation of ammonia:
    • Dissolve the baking ammonia in a small amount of warm milk, stirring until completely dissolved.
    • Add the solution to the previous mixture, mixing thoroughly.
  • Adding the flour:
    • Sift the 00 flour and gradually incorporate it into the dough, mixing with a spatula or wooden spoon.
    • Continue working the dough until it has a smooth, slightly sticky consistency.
  • Cookie formation:
    • Take small portions of dough and shape them into cylinders about 10 cm long.
    • Dip each cylinder in the granulated sugar , coating it evenly.
  • Cooking:
    • Arrange the biscuits on a baking tray lined with baking paper, keeping some distance between them.
    • Bake in a preheated oven at 180°C for about 15-20 minutes, or until the biscuits are lightly golden.
