Ingredients
(4 people):
- 4 eggs
- 8 tablespoons of flour
- 3 glasses of water (for a light consistency)
- A pinch of salt
Instructions
- Batter preparation:
- In a large bowl, beat the eggs with a pinch of salt .
- Gradually add the flour , stirring continuously to avoid lumps forming.
- Slowly add the water , continuing to mix until you get a smooth and homogeneous batter. Let it rest for about 30 minutes to improve the consistency.
- Cooking the crepes:
- Heat a medium nonstick skillet and grease it lightly with a little butter or oil.
- Pour a ladle of batter into the center of the pan and swirl it to distribute the mixture evenly, creating a thin crepe.
- Cook over medium heat for about 1-2 minutes per side, until both sides are golden brown.
- Repeat the process until all the batter is used up, piling the cooked crepes onto a plate and covering them with a cloth to keep them soft.
- Helpful Tips:
- If you prefer lighter crepes, you can replace some of the water with milk.
- To prevent the crepes from sticking, make sure the pan is very hot before pouring the batter.
- If you make the crepes ahead of time, separate them with sheets of baking paper to prevent them from sticking together.
