Ricotta Biscuits

Ingredients

  • 250 g of fresh ricotta 
  • 200 g of 00 flour
  • 100 g of sugar
  • 50 g softened butter
  • 1 egg
  • 1 sachet of baking powder ( 16 g )
  • 1 sachet of vanilla
  • Grated zest of 1 lemon
  • A pinch of salt
  • Powdered sugar for dusting (optional)

Instructions

  • Preheat the oven to 180°C and line a baking tray with baking paper.
  • Mix the fresh ricotta with the sugar and butter until you obtain a smooth cream.
  • Add the egg, vanilla and lemon zest, mixing the ingredients well.
  • Sift the flour together with the yeast and salt, then gradually incorporate into the mixture.
  • Form small balls with the dough and place them on the baking tray.
  • Bake for 12-15 minutes until lightly browned. Let cool before serving.
