Ingredients
 
- 250 g of fresh ricotta  
 
- 200 g of 00 flour 
 
- 100 g of sugar 
 
- 50 g softened butter 
 
- 1 egg 
 
- 1 sachet of baking powder ( 16 g ) 
 
- 1 sachet of vanilla 
 
- Grated zest of 1 lemon 
 
- A pinch of salt 
 
- Powdered sugar for dusting (optional) 
 
Instructions
- Preheat the oven to 180°C and line a baking tray with baking paper.
 
- Mix the fresh ricotta with the sugar and butter until you obtain a smooth cream.
 
- Add the egg, vanilla and lemon zest, mixing the ingredients well.
 
- Sift the flour together with the yeast and salt, then gradually incorporate into the mixture.
 
- Form small balls with the dough and place them on the baking tray.
