Brioche Sandwiches

Ingredients

  • 500 g of Manitoba flour
  • 2 eggs
  • 200 ml of warm milk
  • 100 g of melted butter
  • 80 g of sugar
  • Grated zest of 1 lemon
  • 1 pinch of salt
  • 1 sachet of dry brewer’s yeast (about 7 g)
  • For the finishing: 1 egg (for brushing), icing sugar (optional).

Instructions

  • In a large bowl, mix the Manitoba flour , baking powder, and sugar.
  • Add the warm milk and eggs, mixing well to combine the ingredients.
  • Combine the melted butter and lemon zest, continuing to mix until the mixture is smooth.

Notes

Let the dough rise in a warm place for about 2 hours, covered with a damp cloth. After rising, form balls of about 50 g each and place them on a baking sheet lined with baking paper. Brush each bun with beaten egg for a perfect golden brown.
