Christmas Roll

Ingredients

For the dough:

  • 5 eggs
  • 80 g of 00 flour
  • 80 g of potato starch
  • 150 g of sugar
  • 1 vanilla bean or 1 teaspoon vanilla extract
  • Red food coloring (for a special Christmas effect!  )
  • 2 tablespoons of alchermes  (optional, for color and flavor!)

For the filling:

  • 400 g of mascarpone
  • 500 ml of fresh whipping cream
  • 70 g of icing sugar
  • 200 g of black cherries in syrup
  • 1 teaspoon vanilla extract

To decorate:

  • 2 egg whites
  • Powdered sugar
  • Lemon juice
  • Fresh currants  (or berries as desired for a colorful touch!)

Instructions

  • Preparation of the dough:
    • Preheat the oven to 180°C.
    • Separate the yolks from the whites.
    • Beat the egg yolks with the sugar until the mixture is light and frothy.
    • Add vanilla extract and, if desired, alchermes for a touch of color and flavor.
    • Add the sifted flour and starch, mixing gently.
    • In another bowl, beat the egg whites until stiff.
    • Add the egg whites to the yolk mixture, mixing from the bottom up so as not to deflate the mixture.
    • Add red food coloring until you reach the desired shade.
    • Pour the mixture onto a baking tray lined with baking paper, leveling the surface.
    • Bake for 10-12 minutes, checking for doneness with a toothpick.
  • Preparation of the filling:
    • Whip the fresh cream with the icing sugar and vanilla extract.
    • In another bowl, beat the mascarpone until creamy.
    • Gently fold the whipped cream into the mascarpone until you obtain a smooth cream.
    • Add the candied cherries, mixing carefully.
  • Assembling the roll:
    • Once cooked, remove the dough from the oven and turn it upside down onto a clean, slightly dampened tea towel.
    • Gently remove the baking paper.
    • Roll the dough up on itself with the help of the tea towel and let it cool.
    • Unroll the cooled dough and spread the filling evenly.
    • Roll it up again, this time without the tea towel, forming the final roll.
  • Decoration:
    • Prepare a glaze by whipping the egg whites with icing sugar and a few drops of lemon juice.
    • Cover the roll with the icing and decorate with fresh currants or other berries as desired.
