Ingredients
 
- 500 g of potatoes  
- 250 g of Montasio cheese   (preferably matured)
- 1/2 onion  
- Salt   (to taste)
- Black pepper   (to taste)
- Extra virgin olive oil   (to taste)
Instructions
- Preparation of ingredients:
- Peel the potatoes and grate them finely.
- Cut the onion into thin slices.
- Grate the Montasio cheese .
 
- Cooking the onion:
- In a non-stick pan, heat a drizzle of extra virgin olive oil .
- Add the onion and sauté over medium heat until transparent.
 
- Adding the potatoes:
- Add the grated potatoes to the pan.
- Mix well and cook for about 10 minutes, until the potatoes begin to soften.
 
- Incorporating the cheese:
- Add the grated Montasio cheese .
- Mix to combine the ingredients.
- Season with salt and pepper to taste.
 
- Formation of the Frico:
- Compact the mixture in the pan, forming a sort of omelette.
- Cook over medium-low heat for about 10-15 minutes, until the bottom becomes golden and crispy.
 
- Turn the Frico:
- Using a plate or lid, turn the Frico over .
- Cook the other side for another 10-15 minutes, until evenly browned.
 
- Service:
