Friulian Frico

Ingredients

  • 500 g of potatoes 
  • 250 g of Montasio cheese   (preferably matured)
  • 1/2 onion 
  • Salt   (to taste)
  • Black pepper   (to taste)
  • Extra virgin olive oil   (to taste)

Instructions

  • Preparation of ingredients:
    • Peel the potatoes and grate them finely.
    • Cut the onion into thin slices.
    • Grate the Montasio cheese .
  • Cooking the onion:
    • In a non-stick pan, heat a drizzle of extra virgin olive oil .
    • Add the onion and sauté over medium heat until transparent.
  • Adding the potatoes:
    • Add the grated potatoes to the pan.
    • Mix well and cook for about 10 minutes, until the potatoes begin to soften.
  • Incorporating the cheese:
    • Add the grated Montasio cheese .
    • Mix to combine the ingredients.
    • Season with salt and pepper to taste.
  • Formation of the Frico:
    • Compact the mixture in the pan, forming a sort of omelette.
    • Cook over medium-low heat for about 10-15 minutes, until the bottom becomes golden and crispy.
  • Turn the Frico:
    • Using a plate or lid, turn the Frico over .
    • Cook the other side for another 10-15 minutes, until evenly browned.
  • Service:
    • Once cooked, transfer the Frico Friulano to a serving dish.
