Ingredients:
250g of 00 flour 🌾
250g of durum wheat flour 🌽
200g of sugar 🍬
200g of butter 🧈
4 egg yolks 🥚
25ml of water 💧
Cream:
500ml of milk 🥛
45g of corn starch 🌽
2 egg yolks 🥚
150g of sugar 🍬
Zest of 1 lemon 🍋
Icing sugar for dusting ❄️
Method:
In a saucepan, heat the milk with the lemon zest (without boiling it) 🍋. In a bowl, beat the egg yolks with the sugar and cornstarch 🌟. Combine everything and mix on the heat with a whisk until it thickens 🔥. For the dough, combine the flour, sugar, butter and one egg yolk at a time, adding water 💧. Knead and let it rest in the fridge for 30 minutes 🕒. Roll out the dough to 3/4 cm, add a spoonful of cream, cover with another layer of dough and close with a pastry cutter
