Ingredients
- 200 g of oat flakes
- 2 apples peeled and diced
- 100 g fresh blueberries
- 2 eggs
- 100 ml of milk
- 80 g of brown sugar
- 60 ml of seed oil
- 1 sachet of baking powder
- 1 teaspoon vanilla
Instructions
- In a large bowl, mix the oats , flour and baking powder.
- In another bowl, beat the eggs and brown sugar until frothy.
- Add the milk, oil and vanilla to the egg and sugar mixture, mixing well.
- Add the dry ingredients a little at a time, mixing until you get a smooth dough.
- Add the apples and blueberries, making sure to distribute them evenly throughout the mixture.
- Pour the mixture into a greased and floured plumcake mold.
- Bake in a preheated oven at 180°C for approximately 40-45 minutes, until a toothpick inserted into the centre of the cake comes out clean.
