Zucchini Burgers

Ingredients

  • medium courgettes
  • 100 g of breadcrumbs
  • egg
  • 50 g grated cheese ( optional)
  • Salt and pepper to taste
  • Chopped fresh parsley (optional)
  • Olive oil for cooking

Instructions

  • Grate the zucchini and squeeze them well to remove excess water. It is important to remove the liquid to prevent the burgers from falling apart during cooking.
  • In a bowl, combine the zucchini with the breadcrumbs, egg, cheese (if using), salt, pepper and parsley. Mix well until the mixture is smooth.
  • Shape the zucchini burgers with your hands and cook them in a pan with a drizzle of olive oil for about 3-4 minutes per side, until golden and crispy. For a lighter version, you can cook the burgers in the oven at 180°C for about 15 minutes.
