Almond and Orange Zest Cookies

Ingredients

  • egg whites 
  • 2 cups of icing sugar (about 200 g )
  • 300 g of almond flour 
  • Zest of an orange (or lemon, if you prefer)
  • 1 tablespoon baking powder 
  • Powdered sugar to taste for dusting

Instructions

Start by whipping the egg whites until stiff; this step is crucial to obtain a soft and light consistency . Add the powdered sugar gradually, continuing to mix gently so as not to deflate the egg whites.

In a separate bowl, combine the almond flour with the baking powder and the grated orange or lemon zest. Then, combine the dry ingredients with the beaten egg whites, mixing carefully. The mixture will be soft and fragrant.

Finally, create small balls with the dough and roll them in icing sugar before placing them on a baking tray lined with baking paper. Bake at 180°C for about 12-15 minutes, until the cookies are golden.
