Easy Recipe for Soft and Fragrant Lemon Cookies

Ingredients

  • ½ cup (1 stick) unsalted butter, at room temperature
  • 1 cup + 3 tablespoons granulated sugar, divided
  • 1 large egg
  • 1 large egg yolk
  • 3 tablespoons fresh lemon juice
  • 2 teaspoons lemon zest
  • 2 cups of 00 flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 – 3 drops yellow food coloring (optional)
  • ⅓ cup powdered sugar

Instructions

  • Preheat the oven to 175°C and line a baking tray with baking paper.
  • Beat butter and 1 cup sugar until fluffy.
  • Add the egg, yolk, lemon juice and zest. Mix well.
  • In another bowl, mix together the flour, baking powder, baking soda, and salt.
  • Combine the dry ingredients with the wet ones and add food coloring, if desired.
  • Form the dough into balls and roll them in the remaining sugar.
  • Bake for 10-12 minutes until edges are golden.

Notes

Perfect with a dusting of powdered sugar or a light lemon glaze.
