Ingredients
- ½ cup (1 stick) unsalted butter, at room temperature
- 1 cup + 3 tablespoons granulated sugar, divided
- 1 large egg
- 1 large egg yolk
- 3 tablespoons fresh lemon juice
- 2 teaspoons lemon zest
- 2 cups of 00 flour
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 2 – 3 drops yellow food coloring (optional)
- ⅓ cup powdered sugar
Instructions
- Preheat the oven to 175°C and line a baking tray with baking paper.
- Beat butter and 1 cup sugar until fluffy.
- Add the egg, yolk, lemon juice and zest. Mix well.
- In another bowl, mix together the flour, baking powder, baking soda, and salt.
- Combine the dry ingredients with the wet ones and add food coloring, if desired.
- Form the dough into balls and roll them in the remaining sugar.
- Bake for 10-12 minutes until edges are golden.
Notes
Perfect with a dusting of powdered sugar or a light lemon glaze.
