Ingredients:
1 Onion 🧅
2 Cloves of Garlic 🧄
50 g of Passilina (raisins) 🍇
30 g of Pine Nuts 🌰
100 g of Green or Black Olives 🫒
2 Tablespoons of Capers 🌿
Half a can of Tomato Pulp 🍅
Water 💧
2 Medium Potatoes (diced) 🥔
500 g of desalted Cod 🐟
Salt and Pepper to taste 🧂
Fresh Parsley 🌿
Method:
1️⃣ Fry the base
In a large pan, fry the onion 🧅 and garlic 🧄 with a drizzle of olive oil until golden and fragrant.
2️⃣ Explosion of flavors!
Add the raisins 🍇, pine nuts 🌰, olives 🫒 and capers 🌿. Mix well to combine these ingredients that will give the dish an explosion of unique flavors!
3️⃣ Add the tomato pulp
Pour in the tomato pulp 🍅 and a little water 💧. Mix well and cook over medium heat for a few minutes, until everything is flavored.
4️⃣ Diced potatoes
