Making homemade caramel is a simple process that requires just a few ingredients. Here is the list of ingredients you will need:
Ingredients
- Granulated sugar: 200 g
- Water: 60 ml
- Unsalted butter: 90 g (cut into pieces)
- Fresh cream: 120 ml
- Vanilla extract: 5 ml (1 teaspoon)
- A pinch of salt
Instructions
- Sugar Preparation: In a heavy-bottomed saucepan, add the granulated sugar and water. Stir gently to moisten all the sugar.
- Initial cooking: Place the saucepan over medium heat and cook without stirring. The sugar will gradually melt, forming bubbles and turning golden brown. This process requires attention to prevent the sugar from burning.
- Adding the Butter: When the caramel is amber, add the unsalted butter in small pieces. Stir vigorously with a whisk to incorporate the butter into the caramel. Be careful not to splatter, as the mixture will be very hot.
- Incorporating the cream: Reduce the heat to low and slowly pour the fresh cream into the saucepan, stirring constantly. The mixture may foam vigorously; this is normal. Continue stirring until the cream is fully incorporated and the sauce is smooth.
- Flavoring: Remove the saucepan from the heat and add the vanilla extract and a pinch of salt. Stir well to distribute the flavorings evenly.
- Cooling and Storage: Let the caramel cool to room temperature. Once cooled, transfer it to a clean, dry glass jar. You can store your homemade caramel in the refrigerator for about two weeks. Before using, reheat it slightly to make it fluid again.
