A soft and delicious dessert that combines the creaminess of mascarpone and the enveloping aroma of coffee! An irresistible alternative to the classic tiramisu, in cake format!
Ingredients (for 8 people):
🥚 3 eggs
🍯 150 g sugar (preferably fine granulated sugar)
🧈 100 ml seed oil (sunflower or corn)
🍦 250 g mascarpone (for a creamy and velvety result)
☕ 50 ml espresso coffee, cooled
🌾 250 g 00 flour (or half 00 and half wholemeal for a rustic touch)
🌞 1 sachet of baking powder (about 16 g)
🍫 Bitter cocoa for dusting (also add a little grated dark chocolate for an extra touch!)
Preparation:
Prepare the dough:
Start by whipping the eggs with the sugar in a large bowl, until you get a light and frothy mixture. This step will give the donut the right lightness!
Add the seed oil, mascarpone and espresso, mixing gently to obtain a homogeneous mixture.
Incorporate the dry ingredients:
Sifter the flour with the yeast and gradually add them to the mixture, mixing with a spatula or a wooden spoon. The mixture should be soft and well combined.
Pour into the mold:
Butter and flour a donut mold (24-26 cm in diameter), then pour the prepared mixture inside, leveling it with a spatula.
Cooking:
Bake in a preheated oven at 180°C (static mode) for about 35-40 minutes, or until a toothpick inserted in the center comes out clean. The donut should be golden and soft!
Serve:
Let the donut cool completely before removing it from the mold. Once cooled, sprinkle with bitter cocoa and, if you like, add a sprinkling of grated dark chocolate for an extra touch of deliciousness!
Tips and variations:
Flavours: For an extra touch, you can add a teaspoon of vanilla or a grated orange zest to the dough.
Alcoholic touch: If you like, you can add a spoonful of rum or coffee liqueur to the dough to enhance the flavours!
Topping: For a real tiramisu finish, you can serve the donut with a light mascarpone cream on top, just like the traditional dessert.
