Ingredients

  • 500g chicken breast
  • 150 g green or black olives (pitted)
  • 1 small onion
  • 200 ml of white wine
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Chopped fresh parsley

Instructions

    1. Start by cutting the chicken breast into thin slices. Season with salt and pepper and let it rest.
    2. In a large skillet, heat the extra virgin olive oil . Add the finely chopped onion and sauté until golden brown.
    3. Add the chicken and cook over medium heat until golden brown on both sides. At this point, pour in the white wine , allowing it to evaporate slowly.
    4. Add the pitted olives and continue cooking for about 10 minutes, or until the chicken is tender and the sauce is well reduced.
