Ingredients:
100 g rice
400 ml milk
200 g custard (you can prepare it following your favorite recipe)
2 eggs
100 g sugar
1 tablespoon vanilla extract
Half a sachet of baking powder
50 g pine nuts
Pine nuts to taste for decoration
Icing sugar to taste
Method:
Cook the rice:
Put the milk and rice in a pan and bring to the boil. Cook for about 20 minutes, until the rice has absorbed all the milk. Transfer the cooked rice to a glass baking dish, cover it with cling film and let it cool.
Prepare the dough:
Beat the eggs with the sugar for about 15 minutes, until the mixture is frothy. Reduce the speed and gradually add the sifted yeast and the rice pudding, mixing gently.
Incorporate the cream and pine nuts:
Add the custard gradually, continuing to stir, and add the finely chopped pine nuts.
Pour into the pan and bake:
Pour the mixture into a previously buttered 24-26 cm pan. Level the surface and bake at 180°C for 45-50 minutes, or until the cake is golden and cooked in the center.
Cool and decorate:
Once cooked, remove the cake from the oven and let it cool completely. Transfer it to a serving plate, sprinkle with icing sugar and decorate with pine nuts.
