Potato Donuts

Ingredients:

500 gr flour 🌾
500 gr boiled potatoes 🥔
100 gr extra virgin olive oil 🫒
50 gr sugar 🍬
3 eggs 🥚
1 brewer’s yeast (fresh or powdered) 🍞
1 cup warm milk ☕
Seed oil for frying 🌽
Granulated sugar to taste for “flouring” 🍚

Method:

Prepare the dough:
In a large bowl, combine the flour, the mashed potatoes (well cooked, of course!), the extra virgin olive oil and the eggs. Mix well until you get a sticky dough.
Add the yeast:
Dissolve the brewer’s yeast in the warm milk and pour it into the dough. Continue stirring until well combined.
Let rise:
Cover the dough with a clean cloth and let rise until doubled in size (about 1 hour, depending on the temperature of your kitchen).
Form the donuts:
Lightly flour your hands and take a small piece of dough. Form into balls, then make a hole in the center to create the donut shape. Place them on a floured surface and cover with a cloth to let them rise for another 15-20 minutes.
Fry:
In a large pan, heat the seed oil until it reaches an ideal temperature (about 170°C). Fry the donuts until golden and crispy on both sides.
Final step:
When they are ready, drain them on absorbent paper and pass them in granulated sugar, sprinkling them generously for a sweet touch!

Extra Tip:
If you want to make the donuts even more special, add a pinch of grated lemon zest or a little vanilla to the dough for an even more irresistible aroma!
