Ingredients
- 300 g of 00 flour
- 2 eggs (medium sized)
- 30 g of butter
- 1 lemon (juice and zest)
- 100 g of granulated sugar
- Peanut oil for frying
- Powdered sugar for decoration
Instructions
- Preparation of the dough :
- In a large bowl, sift the 00 flour and make a well in the center.
- Add the eggs , granulated sugar , melted and cooled butter , lemon juice and grated zest .
- Mix the ingredients until you obtain a smooth and homogeneous mixture.
- Wrap the dough in cling film and let it rest at room temperature for at least 30 minutes.
- Rolling out the pastry :
- After resting, divide the dough into manageable portions.
- On a lightly floured surface, roll out each portion with a rolling pin or using a pasta machine, until the dough is about 2mm thick.
- Forming the chatter :
- Using a serrated wheel, cut out rectangles from the pastry.
- Make a cut in the center of each rectangle to create the traditional chiacchiere shape .
- Frying :
- Heat the peanut oil in a deep pan until it reaches a temperature of about 170°C.
- Fry a few pieces at a time, turning often, until evenly golden.
- Drain the chiacchiere on absorbent paper to eliminate excess oil.
- Decoration :
- Once cooled, sprinkle the lemon chiacchiere with plenty of icing sugar before serving.
Notes
Note : For a lighter variant, you can cook the chiacchiere in a preheated oven at 180°C for approximately 15-20 minutes, until lightly golden.
