Ingredients
3 eggs
150 g of sugar
40 g of flour
1 sachet of vanilla
1 vial of rum flavoring
500 g of ricotta
Icing sugar (for dusting)
Method
Preparation of the egg whites:
Whisk the egg whites: In a bowl, whip the egg whites until stiff and set aside.
Preparation of the mixture:
Whisk the egg yolks: In another bowl, whip the egg yolks with the sugar until the mixture is light and frothy.
Add the dry ingredients: Combine the vanilla and sifted flour, mixing gently to avoid lumps.
Incorporate the ricotta: Reduce the ricotta to a cream with a fork and add it to the mixture, together with the rum flavoring. Mix well.
Add the Egg Whites:
Incorporate the egg whites: Gently fold the beaten egg whites into the mixture, stirring from the bottom up to maintain lightness.
Baking:
Prepare the mold: Line a 20 cm mold with baking paper.
Bake: Pour the mixture into the mold and bake in a preheated oven at 180°C for about 40 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.
Finishing:
Cool and dust: Once cooked, let the cake cool in the mold. When it is cold, dust with icing sugar before serving.
Service
Serve the soft ricotta cake at room temperature, perhaps accompanied by a glass of sweet wine or an aromatic tea. It is perfect for snacks or as a dessert after a meal!
