Ingredients
4 egg whites 🥚
1 pinch of salt 🧂
8 g vanilla 🍦
40 g sugar (for the egg whites) 🍬
4 egg yolks 🥚
40 g sugar (for the egg yolks) 🍬
350 g Greek yogurt 🥛
1 tablespoon lemon juice 🍋
Orange or lemon zest 🍊
70 g cornstarch 🌽
Method
Preparing the egg whites:
Beat the egg whites with a pinch of salt until stiff.
Add the vanilla and sugar gradually, continuing to beat until the mixture is glossy.
Preparing the yolks:
In another bowl, beat the yolks with the sugar until pale.
Add the Greek yogurt, lemon juice and grated zest, mixing well.
Incorporate the cornstarch until the mixture is smooth.
Combining the ingredients:
Gently fold the beaten egg whites into the yolk mixture, mixing from the bottom up.
Baking:
Pour the mixture into a greased and floured cake tin (20-22 cm).
Bake at 180°C for 40-45 minutes, until the cake is golden on the surface.
Cooking:
Let it cool completely in the tin before turning it out.
