A healthy, soft and energy-packed treat!
Ingredients:
300 g oat flakes 🌾
150 ml hot water 💦
10 g baking powder 🍞
160 g Greek yogurt (10% fat) 🍶
1 tablespoon coconut sugar (15 g) 🥥
2 eggs 🥚
1 tablespoon olive oil 🫒
A pinch of salt 🧂
Slivered almonds (optional, but highly recommended! 😍) 🌰
20 x 8 cm baking pan (or a round pan for a more elegant effect! 😉)
Preparation:
Prepare the oven: Preheat the oven to 175°C and prepare the pan, buttering and flouring it. If you want, you can line it with parchment paper so you don’t have any problems unmolding it!
Hydrate the oats: In a large bowl, combine the oat flakes and hot water. Mix and let sit for 5-10 minutes until the oats absorb the water.
Add the wet ingredients: Add the yeast, Greek yogurt, coconut sugar and eggs. Mix everything until you get a smooth and well-blended mixture.
Combine the oil and salt: Add the olive oil and a pinch of salt. Mix well, creating a soft and fragrant batter.
Pour the batter: Pour the mixture into the prepared pan, leveling the surface well with a spatula.
Decorate (optional): If you like almonds, sprinkle them on the surface of the cake for a crunchy and tasty touch. You can also add some hazelnuts or walnuts!
Bake: Place the cake in the oven and bake for 50-55 minutes. Test with a toothpick: if it comes out clean, it’s done! The top should be golden and crispy.
Let it cool: Once cooked, let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Serve: Cut the cake into slices and enjoy it as is or with a dusting of powdered sugar or a fresh fruit sauce.
Extra tips:
More delicious? Add a little cinnamon or vanilla to the batter for an even more irresistible aroma!
Vegan alternative: You can replace the eggs with mashed banana and use a vegan coconut yogurt!
