Ingredients:
3 cups flour
1/4 cup warm water
1 cup milk
1 tablespoon brewer’s yeast
4 tablespoons sugar
1/2 cup melted butter or clarified butter
1 egg
To brush the surface:
1 egg yolk
1/4 teaspoon milk (optional)
Instructions:
Activate the yeast: Dissolve the yeast in warm water and let sit for a few minutes until frothy.
Prepare the dough: In a large bowl, mix the flour and sugar. Add the activated yeast, milk, melted butter and egg. Knead until the dough is smooth and elastic.
Proofing: Cover the dough and let it rise in a warm place until doubled in size, about 1 to 2 hours.
Shaping the croissants: Transfer the dough to a floured surface and roll it out into a rectangle about 1/2 inch thick. Cut the rectangle into triangles and roll each triangle from the base to the tip to form the croissants.
Second proofing: Place the croissants on a baking sheet lined with parchment paper, cover them and let them rise for another 30 to 45 minutes.
Preheat the oven: Preheat the oven to 350°F.
Brushing: In a small bowl, combine the egg yolk and milk (if using). Lightly brush the tops of the croissants with the egg yolk mixture.
