Banana Oatmeal Cookies (Sugar Free)

Rich in fiber, healthy and super tasty! These cookies are perfect for a light and filling breakfast. 2 are enough to feel full and full of energy until lunch!

Ingredients:

🍌 2 ripe bananas
🥄 150g oat flakes
🥜 50g chopped walnuts (optional)
🌰 1 teaspoon chia or flax seeds (optional, for an extra touch of fiber)
🍯 1 tablespoon honey or maple syrup (optional, for a little sweetness)
🍫 Dark chocolate chips (optional, for a delicious note)
🧂 1/2 teaspoon ground cinnamon (for a spicy aroma)
🥄 1/2 teaspoon vanilla extract (optional, for an irresistible scent)

Preparation:

Prepare the bananas: In a bowl, mash the ripe bananas well with a fork until you obtain a smooth and creamy puree.
Add the dry ingredients: Combine the oats, cinnamon, chia or flax seeds (if using) and chopped walnuts. Mix everything together until well combined.
Add the sweetener: If you want a touch of sweetness, you can add a spoonful of honey or maple syrup. If you prefer, you can also add some dark chocolate chips!
Shape the cookies: Use your hands to take small portions of the dough and shape them into balls. Place them on a baking sheet lined with baking paper and flatten them slightly to give them the shape of a cookie.
Bake: Bake at 180°C for about 15-20 minutes, or until the cookies are golden and crispy on the edges.
Cool and serve: Let the cookies cool completely before enjoying them. They are perfect to eat on their own or with a little natural yogurt!
Tip: You can store the cookies in an airtight container to keep them fresh for several days. Also, if you want an extra special touch, try spreading some almond or hazelnut butter on top of the cookies!
