Creamy Pasta with Zucchini, Cherry Tomatoes and Spinach

A simple and tasty dish, perfect for a light but tasty dinner! The combination of crunchy zucchini, fresh cherry tomatoes and cream creates a creamy sauce that envelops the pasta, while the spinach and dried tomatoes add a touch of freshness and intensity.

Ingredients (for 3-4 servings):

🍝 350 g of pasta (your choice, such as spaghetti, penne, fusilli…)
πŸ₯’ 2 courgettes
πŸ… 250 g of cherry tomatoes
πŸ§„ 2 cloves of garlic
πŸ… 70 g of dried tomatoes
🌿 80 g of fresh spinach leaves
🧴 200 g of cream (cooking)
πŸ§€ 100 g of parmesan (grated)
🌿 2 teaspoons of oregano
🌢️ 1 teaspoon of sweet paprika
πŸ§‚ Salt to taste
2 tablespoons of olive oil

Preparation:

Let’s prepare the vegetables:
Remove the ends of the courgettes, cut them in half lengthwise and then into thin slices of about 0.5 cm.
Quarter the cherry tomatoes and chop the sun-dried tomatoes. Peel and finely chop the garlic.
Cook the pasta:
In a large pot, cook the pasta according to the instructions on the package, then drain it al dente and reserve a little of the cooking water.
Fry the courgettes:
In a large pan, heat the olive oil and fry the courgette slices for 1 minute until lightly browned but still crispy.
Cook the tomatoes and season:
Add the cherry tomatoes, chopped garlic and sun-dried tomatoes to the pan with the courgettes. Fry for 2-3 minutes, stirring well to combine the flavours.
Pour in the cream and add the spices (oregano, sweet paprika) and grated parmesan. Stir well and simmer, covered, for about 5 minutes until the sauce thickens slightly.
Add the spinach:
Add the fresh spinach leaves to the pan and stir gently until the spinach has wilted (about 2-3 minutes).
Add the pasta:
Add the drained pasta to the pan with the creamy sauce. Stir well to combine, adding a little of the pasta cooking water if necessary to obtain a thinner sauce.
Season with salt and pepper to taste.
Serve:
Plate the creamy pasta, perhaps adding an extra sprinkle of grated parmesan and a pinch of sweet paprika for an extra touch of flavor!
Tip:
You can replace the spinach with other fresh vegetables such as rocket or basil for an even more aromatic variation!
