🥚 3 eggs (separate yolks and whites)
🍬 150 g of sugar
🍊 Juice of an orange
🍋 Grated zest of an untreated lemon
🧈 1 knob of butter
❄️ Icing sugar for dusting

Follow these simple steps to prepare your Migliaccio:

1️⃣ Cook the semolina: Bring the milk to the boil in a saucepan and add the semolina. Stir continuously and let simmer until fully cooked.
2️⃣ Work the egg yolks: In a bowl, beat the egg yolks with the sugar until they are light and frothy. Add the sifted ricotta and mix well.
3️⃣ Add flavorings: Add the orange juice and grated lemon peel to the mixture. Then, add the egg whites beaten until stiff and the cooked semolina (left to cool).
4️⃣ Pour into the cake pan: Pour the mixture into a previously buttered and floured cake pan. Bake in a preheated oven at 180°C for about an hour.
5️⃣ Finish: Let the cake rest before turning it out. Sprinkle with icing sugar for a perfect presentation!
