Sachertorte (Sacher Cake)

Ingredients

  • 110 g of 00 flour
  • 150 g dark chocolate (minimum 60% cocoa)
  • 5 eggs
  • 120 g butter (at room temperature)
  • 180 g granulated sugar
  • 300 g of apricot jam
  • For the icing: 320 g dark chocolate  , 300 ml fresh cream

Instructions

Cake Preparation

  1. Melt the dark chocolate and leave to cool.
  2. Separate the yolks from the whites and whisk them with half the sugar.
  3. Add the soft butter, melted chocolate and sifted flour to the mixture.
  4. Beat the egg whites with the remaining sugar until stiff and fold in gently.
  5. Bake the cake at 180°C for about 45 minutes. Once cooled, cut it in half and fill with apricot jam.

Preparing the Icing

  1. Heat the fresh cream without boiling it.
  2. Pour it over the chopped chocolate and mix until you get a smooth glaze.
  3. Pour the icing over the cake, covering it evenly.

Notes

The Sacher Torte is now ready to be served, an irresistible dessert that combines the richness of dark chocolate with the sweetness of jam.
