A soft, delicious dessert perfect for any time of day!
Ingredients:
3 eggs 🥚
180 g granulated sugar 🍬
80 g sunflower seed oil 🌻
Zest of 1 lemon 🍋 (untreated)
250 g fresh ricotta 🧀
250 g 00 flour 🌾
1 sachet of baking powder 🍰
2 large apples 🍏🍏
1 tablespoon of sugar for the apples 🍬
Juice of half a lemon 🍋
A little butter and flour for the mold 🧈
Preparation:
Prepare the apples: Peel the apples and cut them into small pieces. Put the pieces in a bowl, add the tablespoon of sugar and the juice of half a lemon. Mix well and leave to rest to macerate.
Beat the eggs: In a large bowl, beat the eggs with the sugar until the mixture is light and frothy.
Add the other ingredients: Combine the seed oil and grated lemon zest. Continue mixing, then add the ricotta and mix well. Sift the flour with the yeast and gradually incorporate it into the mixture, mixing gently.
Add the apples: Add the apples with their juice to the mixture, mixing to distribute everything well.
Prepare the mold: Butter and flour a bundt cake mold (24-26 cm in diameter). Pour the mixture into the mold and, for an extra touch of crunchiness, sprinkle the surface with a spoonful of sugar.
Bake: Preheat the oven to 180°C and cook the bundt cake for 40 minutes, or until golden on top. Always do the toothpick test: if it comes out dry, the cake is ready!
Cooking and serving: Once cooked, let the cake cool in the pan for 10 minutes, then remove it from the pan and transfer it to a wire rack to cool completely. You can also dust it with icing sugar for an elegant finish.
