Ingredients

  • 500 g of 00 flour : ideal for obtaining a soft and light dough.
  • 150 g of soft butter : ensures the typical softness of the pandoro.
  • 200 g of sugar : to sweeten the mixture.
  • eggs : preferably at room temperature.
  • 10 g of fresh brewer’s yeast : facilitates leavening.
  • 1 sachet of vanilla : for flavouring.
  • 1 pinch of salt : enhances the flavours.
  • 100 ml of warm milk : helps dissolve the yeast.
  • Icing sugar for decoration : gives the classic snowy look.

Basic Procedure: How to Make Homemade Pandoro

Making a homemade pandoro requires time and patience, but the end result will repay all the effort. Follow these steps to obtain a soft and fragrant dessert.

1. Yeast Activation

  • Dissolve the 10 g of fresh brewer’s yeast in 100 ml of lukewarm milk .
  • Add a teaspoon of sugar and mix well. Let it sit for 10 minutes until it foams.

2. Preparation of the Dough

  • In a large bowl, combine 500 g of 00 flour , 200 g of sugar and a pinch of salt .
  • Add 4 lightly beaten eggs and the activated yeast. Mix with a whisk or a planetary mixer.

3. Incorporation of Butter

  • Once you have a smooth dough, gradually add 150 g of soft butter . Knead until you get an elastic consistency.

4. First Leavening

  • Cover the dough with a cloth and let it rise in a warm place for about 2 hours or until doubled in volume.

5. Shaping and Second Leavening

  • Transfer the dough into a previously buttered pandoro mold. Let it rise again for 1-2 hours.

6. Cooking

  • Bake in a preheated static oven at 170°C for 40-45 minutes. Check the cooking with a toothpick.
