Delicate crepes stuffed with crispy radicchio and creamy gorgonzola, a perfect dish for a refined and tasty lunch!
Ingredients (for 4 people):
For the crepes:
150 g of 00 flour 🌾
300 ml of milk 🥛
2 eggs 🥚
30 g of melted butter 🧈
Salt to taste 🧂
For the filling:
300 g of radicchio 🍂
150 g of sweet gorgonzola 🧀
100 ml of cooking cream 🥄
1 small onion 🧅
2 tablespoons of extra virgin olive oil 🌿
Salt and pepper to taste 🧂🖤
For the gratin:
50 g grated parmesan cheese 🧀
50 ml cooking cream 🥄
Instructions:
Prepare the Crepes:
In a bowl, beat the eggs with the milk. Add the flour and melted butter, stirring until you get a smooth batter. Let it rest for 30 minutes.
In a non-stick pan, cook the crepes one at a time, pouring a ladle of batter and distributing it evenly. Cook until golden on both sides.
Prepare the Filling:
Cut the radicchio into thin strips and finely chop the onion.
In a pan, heat the oil and fry the onion until it becomes translucent. Add the radicchio and cook until it wilts, adding salt and pepper.
Once cooked, add the gorgonzola and cream, stirring until the cheese has melted.
Stuff the Crepes:
Fill each crepe with the radicchio and gorgonzola filling. Fold them in half and then in half again, forming a triangle.
Gratinate the Crepes:
Arrange the stuffed crepes in a buttered baking dish. Sprinkle with cream and grated parmesan.
Bake at 180°C for about 15 minutes, until golden on the surface.
Serve and Enjoy:
Serve the crepes hot, perhaps accompanied by a side of fresh salad
