Ingredients (for a 20×20 cm pan):
🍫 200 g of white chocolate
🧈 100 g of butter
🥥 100 g of coconut flour
🍬 80 g of sugar (better if brown sugar for a richer flavor)
🥚 3 eggs
🥔 2 tablespoons of potato starch
🌿 1 sachet of vanilla (or, even better, a little natural vanilla extract)
🧂 A pinch of salt
🥥 Grated coconut (for decoration)
🌰 1 tablespoon of chopped almonds (optional, for a crunchy touch)
Method:
Melt the chocolate:
In a saucepan, melt the white chocolate with the butter in a bain-marie, stirring gently until you obtain a smooth and shiny cream.
Let it cool to room temperature while you prepare the other ingredients.
Prepare the egg mixture:
In a large bowl, beat the eggs with the sugar and a pinch of salt until you obtain a light and frothy mixture. Use an electric whisk to obtain a light and velvety consistency.
If you want, you can add a teaspoon of natural vanilla extract for a richer and more authentic scent.
Incorporate the dry ingredients:
Add the coconut flour, potato starch and vanilla to the egg mixture.
Mix gently with a spatula to avoid deflating the mixture, until you obtain a smooth and homogeneous mixture.
Add the melted chocolate:
Pour the melted white chocolate into the mixture and mix carefully until you obtain a uniform mixture, without lumps. If you want, you can add some chopped almonds or chocolate chips for an extra touch of crunchiness and deliciousness!
Baking the fondant:
Pour the mixture into the square pan (20×20 cm) lined with baking paper. Level the surface well with a spatula.
Bake in a preheated oven at 170°C (static mode) for 25-30 minutes.
The fondant must remain slightly soft in the center, so do the toothpick test: it must come out moist, not completely dry.
Cooking and decorating:
Let the cake cool completely in the pan, then cut it into squares.
Sprinkle with grated coconut for a final decoration that will make the cake even more inviting.
Extra tip:
For an even more delicious effect, you can add a chocolate sauce (perhaps dark or milk) on top of each square before serving, or a little whipped cream for a super indulgent version!
