Ingredients

250g of 00 flour 🌾
2 eggs 🥚
500ml of milk (also almond or soy milk for the vegan version 🥛)
50g of melted butter (or coconut oil for a lighter version 🧈)
1 tablespoon of sugar 🍯
1 pinch of salt 🧂
1 teaspoon of vanilla extract (optional, but it adds a little something extra 🌸)
Nutella (to taste for filling) 🍫

Preparation

1️⃣ Prepare the batter: In a large bowl, beat the eggs with the sugar and a pinch of salt until you get a smooth and creamy mixture. Gradually add the milk, stirring well to combine. Then, sift the flour and add it to the mixture, stirring until you get a smooth batter without lumps. Finally, add the melted butter (or coconut oil) and mix well.
2️⃣ Let the batter rest: Let the batter rest for about 15-20 minutes. This helps to obtain softer and lighter crepes!
3️⃣ Cook the crepes: Heat a non-stick pan over medium heat. Brush with a little butter or oil. Pour a ladle of batter into the hot pan and tilt the pan to distribute it evenly. Cook for 1-2 minutes per side, until the crepes are golden and slightly crispy. Repeat with the rest of the batter.
4️⃣ Fill the crepes: Once cooked, generously spread Nutella on each crepe. You can fold them in half or roll them, however you like!
5️⃣ Serve and enjoy: Your Nutella crepes are ready to be enjoyed! For an extra touch, you can add a dusting of powdered sugar, a little whipped cream or fresh fruit such as strawberries or bananas.
