Creamy Yogurt Cake: Light, Delicious and Easy to Make!

This soft cake is perfect for any occasion, whether it’s a light snack or a dessert for a special dinner.

Ingredients:

🥄 400g natural yogurt (preferably full fat for a creamy consistency)
🥚 4 eggs (room temperature)
🍬 100g sugar (you can also use coconut sugar for a healthier version)
🌽 50g cornstarch (for a soft and light dough)
🧁 1 teaspoon baking powder
🍦 1 teaspoon vanilla extract (optional, for a hint of flavor)
🧂 A pinch of salt (to enhance the flavors)
❄️ Icing sugar (for decorating, optional)

Preparation:

Prepare the oven and cake tin:
Preheat the oven to 180°C (350°F) and grease and flour a 22cm cake tin, or line it with baking paper for easier release.
Beat the eggs and sugar:
In a large bowl, beat the eggs and sugar until light and fluffy. This is essential for a fluffy cake.
Add the yogurt:
Add the plain yogurt and mix well until smooth and free of lumps.
Add the dry ingredients:
Sift together the cornstarch, baking powder, and a pinch of salt, then gently fold them into the mixture, stirring with a spatula. Be careful not to deflate the batter.
Flavor (optional):
If you like, add a teaspoon of vanilla extract for extra flavor.
Bake the cake:
Pour the batter into the prepared pan and bake for 25 to 30 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
Cool and decorate:
Let the cake cool completely in the pan, then transfer to a serving plate. Dust with icing sugar for a final touch (optional).

Tips:
If you like an even softer cake, you can replace part of the yogurt with fresh cream.
Add fresh fruit such as blueberries or strawberries to the batter for a touch of freshness!
Perfect to serve with a cup of green tea or coffee
