The first step to make the almond cake is to whip the egg whites until stiff, so as to obtain a soft and light cake. Next, mix the softened butter with the sugar until you obtain a creamy mixture. Add the egg yolks, one at a time, and continue mixing until the mixture is smooth.
- Add the chopped almonds and lemon zest to the egg yolk mixture.
- Gently fold in the whipped egg whites using bottom-up movements.
- Pour the mixture into a greased and floured pan.
