Ingredients (for a 22×22 cm square pan):
250 g dark chocolate 🍫
150 g granulated sugar 🍬
100g almonds 🌰 (finely chopped)
80 g di burro 🧈
4 eggs 🥚
1 cup of strong coffee ☕
1 glass of rum 🥃 (optional, but recommended!) )
1 pinch of salt 1
Procedure:
- Melt the chocolate
Start by melting the dark chocolate with butter in the bathtub. When the chocolate is completely melted and the mixture is smooth, let it simmer.
You can even use the microwave, but be careful not to burn it! - Preparing the yogurt
Separate the yolk from the albums.
Beat the yolks with granulated sugar until you get a clear and sparkling mixture.
Add melted chocolate and butter, crushed almonds, coffee and rum. Mix well to combine all the ingredients. - Beating the albums
In a separate bowl, beat the albums with a pinch of salt to obtain a firm texture.
This step is important to lighten the tart! - Combining the ingredients
Add the beaten albums to the yogurt and chocolate mixture, stirring gently from the bottom up. This will help keep the cake soft and moist. - Cooking
Pour the mixture into a pan lined with baking paper and level the surface well.
Bake in a static oven preheated to 180°C for about 30 minutes. The cake should be slightly moist inside, so test the toothpick: if it comes out with a few small moist crumbs, it’s perfect! - Relaxation
Once cooked, let the cake cool completely in the pan.
Cut it into squares to serve. Your Barozzi cake is ready to be enjoyed!
