Ingredients:
2 cups (200 g) rolled oats, blended in a blender
1 teaspoon baking powder
1 cup (240 ml) milk of your choice (cow, almond, soy, etc.)
1 carrot, grated
1 apple, grated
Pinch of cinnamon (optional)
Pinch of salt
Directions:
Make the oats: Start by blending the rolled oats in a blender until finely ground. This will make the oats more like flour and will help bind the ingredients together.
Mix the dry ingredients: In a large bowl, combine the rolled oats, baking powder, cinnamon (if desired), and pinch of salt. Stir well to combine the ingredients.
Add the wet ingredients: Add the milk, grated carrot, and grated apple to the dry mixture. Mix until the mixture is smooth and well combined.
Bake: Pour the mixture into a baking tray lined with baking paper. Smooth the surface well with a spatula. Bake in a preheated oven at 180°C for about 25-30 minutes, or until the surface is golden and a toothpick inserted into the center comes out clean.
Cool and serve: Once cooked, let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Cut into squares or slices and serve! You can also enjoy them with a little yogurt or fresh fruit
