Moroccan Lemon Cookies

These delicious lemon cookies, made with just one egg, melt in your mouth and are perfect for any occasion!

Ingredients


1 egg

50 ml of seed oil

3 tablespoons of icing sugar
A pinch of salt
200 g of flour

10 g of baking powder
Zest of 1 lemon

Juice of 1 lemon

Method

1️⃣ Prepare the mixture:
In a large bowl, beat the egg with the icing sugar until the mixture is light and smooth.
2️⃣ Add the oil:
Pour little by little, incorporate the oil while stirring with a whisk or spoon.
3️⃣ Flavor:
Add the lemon zest and juice, stirring well to combine the liquid ingredients.
4️⃣ Sift the dry ingredients:
Sift the flour and baking powder directly into the bowl, adding a pinch of salt.
5️⃣ Mix the dough:
Gently mix with a spoon until the mixture is smooth and soft, but not sticky.
6️⃣ Rest in the refrigerator:
Cover the bowl with cling film or a damp cloth and leave to rest in the refrigerator for about 10 minutes. This will make the dough easier to work with.
7️⃣ Prepare the oven:
Preheat the oven to 180°C and prepare a baking tray lined with baking paper.
8️⃣ Shape the biscuits:
With slightly damp hands, form balls of dough and roll them in icing sugar. Arrange them on the baking tray, leaving space between them.
9️⃣ Bake:
Place in the oven and bake for about 20 minutes, or until the cookies are golden and cooked.
