A creamy and flavorful first course, perfect for surprising your guests with a gourmet touch!
Ingredients (for 4 people):
🍝 320 g of pasta (rigatoni or fusilli)
🌶️ 2 red peppers
🧀 150 g of stracciatella
🧅 1 small onion
🧄 1 clove of garlic
🌿 8-10 fresh basil leaves
Extra virgin olive oil (to taste)
🧂 Salt and pepper (to taste)
🌻 Seed oil for frying
Preparation:
1️⃣ Preparation of the peppers: Wash the peppers, cut them into pieces and remove the seeds and filaments.
2️⃣ Sauté: In a pan, brown the chopped onion and garlic with a drizzle of extra virgin olive oil. Add the peppers and cook for 10-15 minutes, until soft. Remove the garlic.
3️⃣ Pepper cream: Blend the cooked peppers until you get a smooth cream. Season with salt and pepper to taste.
4️⃣ Fried basil: Heat the seed oil in a saucepan and fry the basil leaves for a few seconds, until they become crispy. Drain on absorbent paper to eliminate excess oil.
5️⃣ Cooking the pasta: Cook the pasta in plenty of salted water and drain it al dente.
6️⃣ Assembly: Combine the pasta with the pepper cream, stirring well to blend the flavors. Top each dish with a generous spoonful of stracciatella and garnish with fried basil leaves.
