Baci di Dama

Baci di Dama are a classic of Italian pastry, with their dark chocolate heart and the delicacy of almonds. Perfect for any special occasion!

Ingredients for 125 biscuits:

For the biscuits:
300 g butter

300 g sugar

300 g almond flour

300 g flour

50 g egg whites

3 g salt

For the filling:
375 g dark chocolate

Preparation time:
Preparation: 45 min

Cooking: 12 min

Rest: 2-3 hours

Total: 4 hours

Procedure:

1️⃣ Shortcrust pastry:
Work butter and sugar until creamy.
Add almond flour and mix.
Combine the egg whites and salt, then add the 00 flour and knead briefly.
Leave to rest in the refrigerator for 2-3 hours.
2️⃣ Shaping:
Roll out the dough to 1 cm, cut it into 4-5 g cubes and shape into balls.
Place them on a baking tray and bake at 180°C for 12 minutes.
3️⃣ Filling:
Temper the dark chocolate, then put it on half of the biscuits.
Combine with the other half and let the chocolate solidify.
Tips:
Scale: for biscuits of the same size.
Do not open the oven during cooking.
Storage:
Without filling: tin for 1 week.
With filling: freezable for 1 month
