  • Grate the peel without touching the white part, which is bitter.
  • Squeeze the juice and filter it to remove any seeds.

  • In a large bowl, beat the 3 medium eggs with 125g of sugar using an electric whisk.
  • Continue beating until the mixture becomes light and fluffy.
