1. Preparation of the dough

  • Dissolve the brewer’s yeast in a cup of warm milk with a spoonful of sugar . Let it rest for a few minutes.
  • In a large bowl, mix the 00 flour with the yeast mixture, gradually adding the water and olive oil .
  • Add salt only at the end to avoid interfering with the leavening.
  • Knead vigorously until smooth and elastic. Cover with a cloth and let rise for 2 hours, or until doubled in size.
